Is the standard speed of trains so fast that it makes sightseeing from the train difficult? Can you see the countryside from a high-speed train like the ICE?

Hi, I'm planning to visit a number of European countries using Eurorail. For travel between say, Copenhagen, Berlin, Vienna, Geneva, Berne, Prague, Rome, Florence, Naples, and Paris, I am wondering whether the standard Eurorail train speed is so fast that it makes sightseeing very difficult, or is it only when using the high-speed (eg. ICE) trains that this is the case? Thanks Deb
